Pumpkin Pie Bird Cookies

  • 1 cup creamy almond butter
  • 1/2 cup pumpkin puree
  • 1/4 cup honey OR coconut sugar (PICK ONE )
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract

Mix all ingredients well

Heat oven to 350F degrees
Use parchment paper on stainless steel or aluminum cookie sheets and use a spoon to drop the dollop on the paper
Use a wet fork to press crisscross on the top of each cookie (the wet fork will prevent mix from sticking)
Bake for 12-15 minutes
Remove from oven and allow to cool completely.  freeze as you wish once cooled
