YUM YUM Italian

  • 1 Spaghetti Squash 
    (Cut in half meat side up, tops smeared with a small amount of red palm oil or coconut oil, in the oven to bake 45 minutes at 350 F)

While this is baking take

  • 1 cup fresh Basil
  • 1 Tablespoon Coconut Oil
  • 4 Tablespoons of shelled raw Pine Nuts
  • 1 teaspoon of Oregano

Place all of these ingredients in a blender and blend until you have a smooth soup consistency. ( Here you can add Red Palm Oil and almonds as well) Set this aside.

Remove the squash from the oven and let cool enough to be handled.

Take a fork and scrape the insides of the squash on to a dish, you will have noodles. Add the pesto mix to the noodles and serve warm. NOTE: this smells DIVINE!

If you only have a small flock (1-2 birds) this freezes well. Cool completely and freeze in serving size containers.
